Stop Dealing With Cold Edges in Your Industrial Ovens
If you’ve spent any time with large convection ovens, you know the frustration. You pull out a rack of bread and the middle looks perfect, but the edges? They’re pale. Underdone. It’s because airflow is finicky, and the corners of the baking chamber almost always end up as cold spots. We found a way to fix this. Instead of fighting the air, we just add short-wave infrared bulbs around the perimeter. Why this actually works Convection is slow. It relies on moving air, which takes its sweet time. Infrared is different. It doesn’t bother heating the air first; it just beams energy straight onto the surface of the bread. By putting IR lamps along the edges, you’re basically creating a “heat curtain.” It fills in those gaps where heat usually leaks out around the door seals, making sure every loaf gets the same treatment. The gear we use We stick with high-wattage quartz halogen tubes. The quartz is the secret—it lets the filament get incredibly hot without blocking the IR radiation. We also keep it simple with the power. We spec these bulbs to match whatever you’re already running—usually 230V or 400V. That means you don’t have to cram bulky transformers into your control panel. They’re designed as drop-in replacements for standard elements. We use R7s or SK15 connectors because they fit tight. Trust me, you want a snug fit here. A loose connection with this much current will arc and fry your socket in no time. A few things to keep in mind The best part? These lamps heat up instantly. You don’t have to stand around waiting for the whole chamber to “soak” before you start. But there is a catch. High heat density is powerful. If the bulbs are too close to the bread, you’ll scorch the crust before the center is even warm. You’ll need a solid mounting bracket to keep the distance exactly right. If you wire these into your PID controller, you can pulse the IR bulbs separately from the fans. It gives you a knob to turn for that edge-to-center balance, so you can get the color exactly where you want it.
