
Stop Waiting on Your Oven to Catch Up
Ever noticed how standard commercial deck ovens have a bit of a “lag”? You tweak the temperature, but the heating element just takes its sweet time to get there. And when you want to cool things down? Even longer. It’s frustrating. That’s why we use quartz infrared tubes. We call it “second-response” heating. In plain English: it hits your target temperature in seconds. No more standing around waiting for the oven to wake up.
How it actually works
Here is the secret. We use a high-density tungsten filament inside a transparent quartz tube. Unlike those chunky metal coils that take forever to warm up, quartz has very little “thermal mass.” This means the heat doesn’t get trapped in the metal. Instead, it shoots straight out as short-wave radiation, hitting your dough or crust instantly. It’s fast. Really fast. And that changes your whole morning. You can push out more batches per hour because you aren’t losing precious minutes waiting for the oven to recover its heat after you slide in a tray of cold product.
A few things to keep in mind
We build these tubes to survive the chaos of a real kitchen, but they aren’t indestructible. The quartz handles heat shock like a pro, but it hates being pinched. When you’re installing them, be gentle with the mounting brackets. If you bend or squeeze the tube, it’s going to burn out way sooner than it should. Also, because the heat kicks in so quickly, you need a smart PID controller. If the controller is clunky, the temperature will overshoot the mark. You need a system that can flick the power on and off rapidly to keep everything steady.
The trade-off
Nothing is perfect. With this much power, you have to watch out for “hot spots.” Quartz lamps deliver an intense, concentrated blast of energy. If your bread is sitting too close to the tube, you’ll end up with a scorched crust while the middle is still raw. It’s all about the balance. You’ve got to get the distance and the wattage just right to get that perfect golden-brown finish and a fully cooked center.
